TECHNICAL CHARACTERISTICS
The COMBI 300 consists of a DIV 300 dough divider and a PAL 300 VS rounder, which can operate sequentially or separately.
Placing 30 kg of unproofed dough into the divider, one can obtain balls weighing from 20-30 gr to a maximum of 300 gr.
The dough must have the right moisture content, not too hard or sticky, and must not crumble when kneaded.
For accurate weight measurements, the dough must be firm enough to stay in place until it reaches the sensor that triggers the cutting. With very strong flours (like Manitoba), it is difficult to obtain a 300 gr portion.
